Baked Purple Potato & Pumpkin Croquette(오븐 고구마& 호박 고로케 )

A few weeks ago, as I drove… the idea of making these sweet potato balls popped up in my head. Combine colorful purple sweet potato and pumpkin..  Mmm, I thought it will be a very lovely dish. Yet, I wasn’t sure if this would work… Well, not only did it work but it came out so beautifully and tasty too. Orzo with Salmon

My doctor encouraged me to eat more fish, especially salmon. He said salmon is one of the richest sources of omega 3 fatty acids and  good for my heart.  He said they decrease the risk of heart arrhythmia, lower triglycerides and slow the development of plaque in blood vessels.(Oh~yes, please :) ) He said try to get 2 servings of fatty fish like salmon, tuna and lake trout per week. French Lentil Salad

French lentils have more chewy and  nutty texture taste than brown lentils. That’s why I like to use these lentils for salad. This can be eaten warm or cold. It taste even better a day after. (more…)

Dutch Baby Pancake

Many years ago, Christy bought two iron cast pans at Macy’s. She gave one to me and kept one for herself. Since then I have been making these pancakes with my pan. This pancake tastes like popovers. Our kids weren’t  that appreciative of the taste of pancakes when they were little. However, when I made the pancake and presented to the kids today, they were so impressed! They loved the tangy taste from the lemon juice and sweetness of powdered sugar. They finished the pancake in no time. (more…)

Meatloaf for Dad

Dad called last night and told me that he’s been craving for meatloaf. It’s a good thing that he has cravings…..This morning I created this meatloaf  just for him. I tried to make it a lot  more healthier than usual. I added more vegetables and tried to use least amount of fat as possible. (more…)

Kim’s Family Winter Break Vacation~Disneyland 2010

Every Winter break, we try to take the kids to different places.  This year we chose Disneyland. It was Zachary’s wish. He’s been asking us to take him there. He told us he never been to Disneyland … Well, we did take him before, last time was when he was only 3 years old. :)   I am happy to report, Zachary had an AWESOME time at Disneyland. We are pretty sure he will remember it now.  I have these pictures to show him he says he doesn’t.

A Day at Stanford

What a pleasant day we all had….  Hubby and I decided to take our kids to Standford today. Take a tourof the university and then take them to have a nice lunch/dinner. Just walking around campus was so nice and peaceful. I had a fun time taking pictures too. (kids hated to pose for me) I still do it anyway! Afterwards, pictures and memories will remain…. (more…)

Valentine’s Day Dinner 2010

Cooking for someone I love is one of my pleasures in life. Many years ago, I decided to cook a Valentine dinner for our family especially for my kids.
