Roti Buns with Butter

When Audrey asked for Roti buns for her award yesterday…. I used this recipe and hoped it will be better than my first Roti recipe~

Here’s Today’s Recipe~


3 cups bread flour,sifted

1/3 cup sugar

1 teaspoon sea salt

1 package dried yeast

1 egg, at room temperature, lightly beaten

1 1/4 cups warm milk

5 tablespoons butter,at room temperature


Cold butter~ cut into 1/2-inch cubes

Mix  flour, sugar and salt in electric mixer with dough hook or paddle on low speed for one minute.(hook works better :) )

Add yeast, mix well.

Then add egg and milk.

Mix on low speed for one minute  then mix on medium speed for  7-8 minutes.

Mix in butter and  mix 5 minutes more on medium speed until soft, smooth and elastic dough. Remove dough from bowl and shape into a ball.

Place in a bowl,cover, and leave to rise in a warm place until doubled in volume.

Punch down and knead briefly.

Divide the dough  into 17 – 18 portions. Cover and let the dough rest for 15  minutes. Cut cold butter into about 1/2-inch cubes.

Fatten a ball of dough and place a butter cube.

Gather the edge and pinch to  seal.

Place dough on a greased/parchment paper.

Cover loosely and leave to rise in a warm place about 45 minutes.

I made the topping while the dough is rising…


1 cup butter

1 1/2 cups  icing sugar

3 eggs

1/8 teaspoon cinnamon

1 cup all-purpose flour

2 tablespoons instant coffee

1 tablespoon hot water

Combine coffee and water in a small bowl. Set aside.

Beat butter and sugar in electric mixer with the paddle attachment on medium speed for 5 minutes until mixture is light and fluffy.Gradually beat in eggs. Mix in coffee. Sift flour into mixture and mix at low speed.

Fill the topping in a plastic bag and keep in the fridge until ready to use. ( You will have more than you need for these buns, but  the topping will keep for 1 week in the refrigerator and  freeze in a freezer-proof container for up to 1 month.)

Cut off a tiny tip of the bag and pipe the topping on the buns in a spiral starting from the top center.

Bake in preheated oven at 375 degrees F for 12- 15 minutes.

Cool on a rack.

    I like the previous recipe.

    I use it more often… The texture of this recipe bread tends to be a little light and also I have found it is much easier to work with smaller dough recipe. Good luck and thanks for visiting.
