Korean Sweet Potato Muffins 고구마 머픈

“Wow! 이것 너무 맛있다~” said hubby when he took his first bite of the muffin.

I was surprised to hear that expression from him… normally he doesn’t eat muffins.These muffins were awfully Good….they are so addictive~ So moist and yummy and I ended up eating three of them maybe more… Boys loved them too… Ryan took two muffins to school this morning and told me they tasted really good at school, which was a day later.

Lately whenever I visit Korean or Japanese markets I find these fresh sweet  potatoes…. just want to buy them because  they look so good… I bring them home and keep thinking of ways to cook them.

Today’s Recipe

3 cups flour

1 1/2 cups sugar

2 teaspoons baking powder

1/4 teaspoon salt

3/4 cup vegetable oil

3/4 cup milk

2 eggs

2 small Korean sweet potatoes(steamed & chopped into 1/2-inch)

Chocolate and chopped pecans (optional)

Steam,cool and chop into 1/2-inch cubes.

Preheat the oven to 375 F.

Sift together the flour, baking powder and salt,

Beat in the egg, sugar and oil.

Gently beat in the dry ingredients into the oil mixture in 3 batches alternating with the milk.

Mix just until blended.

With a wooden spoon, stir in the sweet potato.

Fill the prepared cups about two-thirds full. Bake until gold brown. (I filled too much and took longer to bake… )

Sprinkled some chopped pecans and chocolate if you like…  Next time will fold pecans in the batter instead of sprinkling on top . They burned a little today so I removed the burnt pecans before eating.

Bake at 375 degrees for 18 -20 minutes or until a tester inserted in the center comes out clean. For even baking, half-fill any empty cups with water. Baked 18 muffins today~

    Hi Misty! I was just about to bake these muffins but I noticed that you didn’t have the measurement for the baking soda. I could try guessing but I would hate to ruin it by doing so. Can’t wait to bake these and try them! Thanks!

    Hi Judy, Oops~ & thanks ^^ Just checked my recipe book. On the day of baking I added 2 teaspoons of baking powder only. I just updated it. Thanks so much!!! Also, you can add water instead of milk so that Issac can enjoy it as well. I hope the muffins turn out great!

    Hi Misty! Thanks for responding back…I thought you didn’t get my message but I didn’t want to bother you too so I asked my sister who likes to bake. She suggested maybe 1 tsp and it turned out great. My mother and the people she disciples loved it. I ended up baking another batch for them. My hubby also loved them too. The kids liked the muffin but they didn’t like the sweet potatoes..hahaha. Anyways, I’ll def try baking them w/o the baking soda. I saw that you went the Knott’s berry farm. That’s my part of the town. Well, more like my mom’s. I live in Torrance like 30 minutes from LA. Well, I’m sure you’ll want to catch up with you rest. Thanks again!     I am so glad they turned out great. I think I will also try using just 1 teaspoon of baking soda along with baking powder next time. Thanks for your input. Also, it’s so neat and fun to read your comments~ You seem like a very fun person who has so much energy. I think the people around you are so blessed to be near you. Oh~wow~ you live in Torrance! I think I know where that is… So many wonderful places to go and great food are in the LA area. We love visiting there. I gained a few pounds by munching down all the delicious food!
