Today was an extremely fun and experimental cooking day… I made my own spicy BBQ sauce with KochooJang. It turned out so wonderful that I had to give myself a pat on the shoulder. Hahaha~ Should I call it “KkoKko’s KochooJang BBQ sauce”?
Open up all the windows in your house before you make the sauce……”What’s that awful smell???” said Zach….the smell even woke up Ryan from his sweet nap …Yeah~ it was heavy duty smell for sure.
Note: If you don’t want to spend time making the sauce….just add kochoojang sauce to regular BBQ sauce and red pepper flakes, mix well and used it. You don’t have to cook the sauce. That’s how I used to make it.
Today’s Korean KoChooJang BBQ Sauce
1/2 cup Ko-choo-Jang(Korean red pepper paste)/고추장
1/2 cup apple cider vinegar
1/2 cup brown sugar
1/2 cup ketchup
1/4 cup Worcestershire sauce
1/4 cup finely chopped onion
1 tablespoon lemon juice
1 teaspoon spicy brown mustard
1 large minced garlic clove
1/2 -1 teaspoon red pepper flakes
In a heavy bottomed sauce pan combine all the ingredients.
Bring to boil and simmer, uncovered for 1 hour or until slightly thickened, stirring occasionally.
When I tasted it for very first time~ I said, “wow!”
After making the sauce I tried on some pork spareribs…it tasted so good on ribs… Ryan said, “Mmm~ good sauce!”
To cook today’s pork ribs I used,
about 4 pounds of St. Louis style spareribs
1/2 batch of Kochoojang BBQ sauce
salt & pepper
To tenderize the ribs so the meat pulls easily from the bones… I cut into serving-sized portions and placed them on a rack in a shallow baking pan.Lightly Seasoned with salt and pepper.
Cover tightly with foil and bake at 350 degrees for one hour.
Brush some of the sauce on ribs.
Bake,uncovered. 30-45 minutes longer or until meat is tender. Brushing occasionally with remaining sauce. Remove from the oven.
If you like… brush some more sauce and right before serving.
I also cooked ribs in the slow cooker after baking in the oven for one hour.
For slow cooker cooking
Place baked ribs in slow cooker, pour some sauce over the ribs, cover and cook on low for 3 hours.
Serve with remaining sauce. The ribs cooked in a slow cooker are little more tender than oven baked.
They both tasted really, really good!
It will be a perfect sauce for Memorial Day BBQ picnic…. Don’t you think?
